This recipe makes a gorgeous and filling side-dish that is surprisingly light and perfect for winter dinners. Serve with fish or meat.
Serves 2
500g new potatoes
1 tbsp good quality olive oil
1 tbsp chopped rosemary
Salt and ground black pepper
Preheat the oven to 180 C (200 C if not a fan oven)
Put the potatoes in an oven dish, drizzle the oil over the potatoes and mix them around in it. Sprinkle the rosemary on top and season with salt and freshly ground black pepper.
Roast for 45 minutes. Pierce with a knife to test they are cooked through.

Homemade Healthy Fries
French fries are hard to resist but can be bad for you in so many ways....But it is possible to make fries more health-friendly! Baking instead of deep-frying is one important factor but also rubbing with some good quality olive oil.....
Serves 2-3
500g potatoes
Olive oil
Salt and Black pepper
Preheat oven to 200 C (fan oven, will need a higher temperature if not using a fan oven)
Chop potatoes into finger width chunks
Rub with olive oil
Season with salt and black pepper
Put into oven dish and cook for 15 minutes
Enjoy with some tomato ketchup and a little bit of American mustard!
