Sweet Potato Wedges

I love sweet potatoes! Discovering these was a revelation and I include them in all sorts of dishes and they can be prepared and cooked in several ways.

Sweet potatoes are such a wonderful alternative to your everyday potato. Not to dismiss the humble potato but sweet potato makes for a great change and is equally versatile. There are many ways to cook a sweet potato but this recipe can be used as an alternative for potato wedges so is great with burgers or steak. One caveat: sweet potatoes cook faster than potatoes so keep an eye on them.



Serves 2-3

500g Sweet potato
Olive oil
Black pepper

Preheat oven to 200 C (temperature is for fan oven, adjust to higher temperature for oven without fan)

Chop the sweet potato into medium size wedges. Leave the skins on.

Rub with oil and season with black pepper.

Place in baking dish and put into oven and roast for 20 minutes.

These are great with a range of dishes - substitute for potato wedges or fries in pretty much any meal.
